Irish Pub & Carvery brings
Emerald Isle to Absecon Isle

CITY - Casinos still outnumber Irish pubs in
Atlantic City, but it is close. However, there
is only one Irish pub in the city that
originated in Ireland literally, and that is
Trinity Irish Pub & Carvery on the Pier at
Caesars.
One of the bars was salvaged from a closed
library and everything else, including the wood
floor, tin ceiling and executive chef Martin
Doyle came from Ireland.
Born and raised in Dublin, Doyle handles the
chef’s duties at restaurants Trinity, Sonsie and
Game On at the Pier as part of the Lyons Group
that includes Vince Chiaramonte as vice
president of all three Atlantic City properties.
Chiaramonte has extensive experience in
operating large casino and resort restaurants,
and Doyle, an award-winning chef, spent the past
10 years supervising kitchens at the Red Eye
Grill, Windows on the World and Sulian at the
Borgata.
Like a true Dublin pub, Trinity has comfortable
dark wood furniture, live Irish music and a
fireplace that sets a warm, welcoming
atmosphere.
The aromas from the other attraction at Trinity,
the carving station located behind one of the
two bars, fill the place with a feeling of
stepping into grandma’s house on a Sunday
afternoon, if your grandma lived in Ireland and
could really cook.
“We have created an exiting menu that features
contemporary updates of traditional Irish pub
fare,” said Doyle.
Bangers and mashed (sausage and mashed
potatoes), corned beef and cabbage, Dublin
Coddle (pork and vegetable casserole),
Shepherd’s Pie, and All Day Breakfast Fry are
all part of Doyle’s heritage.
The real standout of the pub has to be The
Carvery. Freshly roasted meats spin ever so
slowly on a rotisserie, waiting to be freshly
carved to the customer’s order.
The Carvery has a regular menu of items and has
daily sandwich specials of hand carved meats.
An Irish Pub is the only place to be on St.
Patrick’s Day, Saturday, March 17, and Doyle is
working on a special menu for the festive
celebration, but you don’t have to wait a month
for great Irish music.
The entertainment at Trinity includes local
favorites Peter McDonald who performs at 6 p.m.
Wednesday nights and Birnham Wood, a nine-piece
Irish band, that plays from 8 p.m. to 11 p.m.
Thursdays. There is live music from 10 p.m. to 2
a.m. on Fridays and Saturdays.

pudding, baked beans, tomato, mushrooms
and a sunny side up egg.
Roast Chicken Club ($10) Chicken salad
made with chicken fresh from the

Chicken Pot Pie ($12) Fresh oven baked
in a crisp pastry shell.
Beer Battered Burger and Curry Fries
($10) A hand made burger, beer battered

fries and spicy curry sauce.
