Chef Annmarie Chelius of Ocean City, educator at Atlantic Cape Community College’s Academy of Culinary Arts, shares a recipe for a simple and sweet Super Bowl Sunday snack that’s both kid- and figure-friendly.
Strawberries and Cream with Crunchy Garnish
Ingredients:
1 quart strawberries with stems, washed
4 ounces low-fat cream cheese
4 ounces vanilla Greek yogurt
3 tablespoons honey
1 teaspoon vanilla
2 cups crushed garnish: Grape Nuts cereal, Rice Krispies, graham crackers, etc.*
Method:
In a large bowl, whip the cream cheese, honey and vanilla. Fold in the Greek yogurt.
Dip strawberries in the cream mixture.
Place healthy cereal/graham crackers in a plastic bag and “crush” mixture using hands, a pan or a rolling pin. (Home chefs can substitute garnish with any healthy cereal or snack of their choice.)
Carefully dip strawberries in the crunchy garnish.
Place each strawberry in a paper cup or cupcake liner to serve to guests.
